Mi-so Shiru
A warming, umami-rich Japanese soup made with dashi stock and miso paste. A staple of everyday Japanese cooking.
Heat dashi stock in a saucepan over medium heat until just below boiling. Do not let it boil.
💡 Boiling kills the delicate dashi flavour
Dissolve miso paste in a ladle of hot dashi, then stir it back into the pot. Add cubed soft tofu gently.
💡 Always dissolve miso separately to avoid lumps and never boil after adding miso
Serve immediately in bowls, garnished with sliced spring onion.
