Thailand's most famous noodle dish — stir-fried rice noodles with shrimp, egg and bean sprouts in a tangy tamarind sauce.
Soak flat rice noodles in room-temperature water for 20 minutes until pliable but still firm. Mix fish sauce, a splash of rice vinegar, and a pinch of sugar for the sauce.
💡 Do not soak in hot water or the noodles will overcook in the wok
Stir-fry shrimp in a very hot wok until pink. Push to side, scramble the eggs, then add drained noodles and sauce. Toss everything together on high heat.
💡 High heat is essential — low heat makes the noodles sticky and clumped
Add bean sprouts and toss for 30 seconds. Serve immediately garnished with crushed peanuts, lime wedges and spring onion.
